Meet my new favorite summer drink: the antioxidant-rich Watermelon, Berry, and Mint Cooler. Incredibly hydrating and naturally delicious, this recipe has no added sugar, which also makes it a great summer treat for kids. If you have popsicle molds, you can even try it out frozen for a refreshing and healthy treat!
Watermelon, the star ingredient in this summer cooler, is high in vitamin C and vitamin A. It is also high in lycopene, an important antioxidant for heart, eye, and skin health. Berries, also high in vitamin C, contain phytonutrients that have an antioxidant effect on our bodies as well. This means that this summer drink helps to counter the natural oxidation that happens to all of us that helps contribute to aging and also possibly many other chronic and degenerative illnesses such as cancer, heart disease, and dementia.
The added mint complements the watermelon and berries perfectly, and has traditionally been used as a digestant, and to help ease symptoms of IBS.
I used frozen mixed berries for this recipe, but you can also use just frozen strawberries or any other frozen berries if you would like. This will make approximately 2 servings. Hope you are enjoying your summer!
