Banana and Blueberry Chia Seed Pudding

Since I’ve started studying nutrition, one of my most frequently asked questions is: ‘What would be a healthy dessert to eat when I have a sweet tooth’? This pudding is a great answer. High in nutrients and Omega 3 fatty acids, this is a dessert you can feel good about! It is also very simple to make, which gives it extra bonus points.

Banana and Blueberry Chia Seed Pudding

Ingredients

  • 2 ripe bananas
  • 1 cup coconut milk
  • 1/4 cup chia seeds
  • 1/3 cup blueberries – you can use fresh or frozen (make sure to thaw the frozen blueberries)
  • Dash of pure vanilla extract

Directions

  • In a blender, combine the coconut milk, bananas, blueberries, and vanilla extract
  • Blend until smooth
  • Add the chia seeds and pulse a few times to mix them in evenly
  • Pour mixture into a container and chill in the refrigerator for at least an hour to let the chia seeds plump up and help turn the mixture into a pudding texture
