Toasted Nori Veggie Hand Rolls

Are you gluten-free and want another option for wraps other than using lettuce? If so, check out my current favorite snack: Toasted Nori Veggie Hand Rolls! This anti-inflammatory snack, full of micronutrients and healthy fats, is extremely nourishing for the body. The nori seaweed sheets are high in plant protein, and rich in both iron and vitamin B12. You really can add whatever whole foods you like and can’t go wrong! This particular roll is both sweet and spicy from the combo of the apple and bit of guacamole.

Toasted Nori Veggie Hand Rolls

(Makes 2 rolls)

Ingredients

  • 1 toasted nori sheet (tear the nori sheet into two pieces, so one nori sheet can make two rolls).
  • 1/2 tablespoon of guacamole (for each roll)
  • ¼ cup shredded carrots (divided for each roll)
  • A small handful of salad greens
  • Sliced apple pieces
  • Anything else you would like to add – sprouts, basil, cilantro…a great chance to get creative!

Instructions

  • Tear the nori sheet in half and position sheet horizontally.
  • On the left hand side of the nori sheet, place the ingredients at a 45 degree angle.
  • Bring corner up and start to roll into a cone shape. To seal the cone shape, dampen the edges using a wet finger and gently press to adhere.
  • Don’t worry about rolling it perfectly – I still haven’t refined my rolling technique – just as long as it holds everything together!
