Tomato and Basil Salad

My sister and I share memories of going to our Great Uncle’s house and eating the most delicious ripened tomatoes right off the vine. It tasted like summer, and those tomatoes were the best we’ve ever tasted. These days, this Tomato and Basil Salad is my favorite way to enjoy ripe summer tomatoes. With chopped basil, sea salt, a drizzle of olive oil, and freshly ground pepper, this anti-inflammatory salad is incredibly simple and tastes like the summer you never want to end!

Tomato and Basil Salad

Makes approximately 2 servings

Ingredients

  • 4 ripe tomatoes, sliced
  • 2 tablespoons of olive oil
  • A small handful of chopped basil
  • Sea salt, to taste
  • Freshly ground pepper, to taste

Instructions

  • After slicing the tomatoes, arrange them evenly on a plate.
  • Drizzle with olive oil.
  • Top with freshly chopped basil, and sea salt and freshly ground pepper, to taste.
